The Ultimate Breakfast/ Brunch

One of my favourite things about Australian cuisine is our love for brunch. It’s that perfect sweet spot where breakfast and lunch merge into a leisurely, indulgent affair—one that lets you sleep in and enjoy a few extra bites guilt-free (after all, it’s technically two meals in one… or at least, that’s what I tell myself!).

When it comes to brunch, there’s no better way to enjoy Rocking Rayu than drizzled over friend, poached, or boiled and chopped eggs on toast. For an extra layer of umami, I love spreading a whisper of miso on my toast before adding my toppings (including avocado). Finish with sliced spring onions and fresh herbs—my go-to is chilli and coriander or Thai basil—and, if you’re not vegetarian, crispy fried chorizo or bacon takes it to the next level.

Rocking Rayu is also a game-changer in scrambled eggs. You can also try giving them an Asian-inspired twist by mixing in fresh coriander, spring onions, and finely chopped capsicum and for a spicy boost, add a dash of sriracha, your favourite local hot sauce or gochujang paste. Serve with toast and a side of wilted bok choy or any Asian greens of your choice if you feeling fancy…

Don’t like eggs? Try adding Rayu to your toast over sliced avocado, scrambled tofu, fried artisan mushrooms, spiced lentils or chickpeas, nut butters of all sorts, cottage cheese and smoked salmon, whipped miso tofu, hummus, Muhummarra, tuna mixed with mayo and chives, and anything your creativity dares to try! Deliciously Simple Ways to Use Rocking Rayu

Turn simple pan-fried chicken, pork, steak, fish or most other seafoods into a seriously tasty eat by drizzling Rocking Rayu over the top. The rich umami, subtle heat, and crunchy garlic make even the most basic proteins taste gourmet.

Add to plain rice and noodles for a quick snack—just a spoonful is enough to elevate them into a moorish and filling bowlful. Want to turn it into a full meal? Toss in your favourite pre-cooked protein (tofu, chicken, prawns, or beef work beautifully) and quick-cook veggies like broccolini, Asian greens, kale, spinach, or capsicum. Et voila dinner or lunch is served!

Serve with dumplings, potstickers, gyoza, wontons, or anything of the sort. Rayu makes an incredible dipping sauce all on its own, or you can serve it with a side of mayo, sweet chilli, vinegar & soy, sweet plum or hoisin sauce to keep it unique and interesting.
