Who knew leftovers could be this good? These Crispy Rice Omelettes turn yesterday’s rice into something golden, crunchy, and deeply satisfying. It’s the perfect example of simple ingredients coming together to create unexpected magic — crispy rice at the bottom, soft-set eggs on top, and all the creamy, cheesy goodness you could want in between.
Topped with Rayu and a sprinkle of Get On Top Seasoning, it’s a dish that feels both comforting and a little bit fancy — ideal for breakfast, lunch, or a quick dinner when you need something nourishing but crave a touch of indulgence.
The evolution of crispy rice omelettes…
In our kitchen, this recipe came about from a very real dilemma — what to do with all that leftover rice that somehow always makes its way home after big tasting events. There’s only so much fried rice a person can make, right? Around that time, the crispy rice trend was exploding on TikTok, and suddenly there were crispy rice salads everywhere. But I’ll be honest — I’ve never been one for rice in my salad (I eat salad to get away from the carbs…). So when I spotted a version of this golden, sizzling beauty on none other than Brendan Pang’s Instagram feed, I knew I’d found my answer. Crispy rice, yes — but wrapped up in a fluffy omelette? Absolute genius.
From there, it quickly became a weekly ritual — leftover rice, whisked eggs, a generous handful of cheese, and whatever toppings were calling from the fridge. The first time I finished it with a drizzle of Truffle & Black Garlic Rayu, I’m not exaggerating when I say half the jar disappeared that day, spooned straight over the crispy edges, melted cheddar and creamy avocado. It’s been a forever favourite ever since — proof that when you treat a few humble pantry staples with care, they can become something truly extraordinary.

Why make this on repeat
Because it’s fast, filling, and endlessly flexible. You can whip it up in under 15 minutes, and it always feels like a reward. The crispy rice gives that satisfying crunch, while the soft eggs and melting cheese balance it with richness. It’s also a great way to reduce waste and use up what’s in the fridge — leftover rice, vegetables, even that half avocado sitting on the counter.
The addition of Rayu brings a luxurious umami hit, and Get On Top Seasoning adds a hint of savoury spice — the perfect finishing touches.

Substitutions for the main ingredient (rice)
- Quinoa – A great alternative if you’re after a protein boost. Quinoa crisps beautifully when pressed into the pan and adds a lovely nutty flavour that pairs perfectly with eggs and Rayu.
- Cauliflower rice – For a lighter, low-carb version that still delivers that crispy texture. Just make sure to squeeze out any excess moisture before frying so it browns nicely rather than steaming.
- Barley – This ancient grain gives a wonderful chewiness and depth of flavour. It won’t get quite as crisp as rice, but its hearty texture makes the omelette feel extra substantial and rustic.
- Cooked farro – With its naturally nutty taste and satisfying bite, farro adds a wholegrain twist to the dish. It’s ideal if you’re looking for something with more fibre and a bit of a wholesome, earthy edge.
- Brown rice – The easiest swap if you want to keep it classic but slightly healthier. Brown rice gives a gentle nuttiness and crisp edges while keeping the dish vegetarian and full of slow-release energy.
Top 5 garnish suggestions
- Rayu – The hero finish of the dish, adding a glossy, flavour-packed drizzle that elevates every bite. Even a small amount transforms a simple omelette into something a little luxurious.
- Avocado slices – Creamy and smooth, avocado balances the crispiness of the rice and adds a fresh, buttery texture that complements the eggs perfectly.
- Spring onions – Finely chopped spring onions bring a sharp, fresh note and a pop of colour, cutting through the richness of the cheese and eggs.
- Grated cheese – Melted into the eggs, cheese adds gooey richness and a comforting savoury flavour that binds the textures together beautifully.
- Pickled veggies, or kimchi – A tangy, slightly acidic finish that contrasts with the soft eggs and crispy rice, giving the omelette a bright, flavourful lift.
These tips will help you master the art of making exceptional crispy rice omelettes every time.
A note on ingredients:
Rice: You need to use day-old, refrigerated rice. Freshly cooked rice holds too much moisture and won’t crisp properly. Jasmine or short-grain varieties work best, but you could definitely use brown or even potentially some of your other healthy chewier varieties out there – just steer clear of sticky or risotto rice. NB: I’ve also used microwavable packet rice and it seems to crisp up just fine – I know that some might offend some viewers… but it is an option if you still want to make this but find your beloved rice leftovers are not there or too far gone!

Eggs: Any eggs will do but of course I like to use free-range and pasture raised for flavour and colour where I can — whisk with a splash of milk or water for a softer, silkier omelette. 3 seems to be the golden number for the amount of rice suggested here but you can add more, just adjust the cooking temperature lower so you don’t burn the rice.
Oil: A neutral oil like vegetable or grapeseed ensures the rice crisps evenly without overpowering the flavour. You can also use butter… I can contest that this is a truly delicious substitute also.
Cheese: Melting varieties like mozzarella or cheddar complement the umami notes beautifully – but I think you could get really crazy with this. What if you packed it with blue cheese and marinated beef strips or feta and sun-dried tomatoes and anchovies… it’s a really versatile base. Only stipulation is that the cheese should melt, otherwise go wild and report back please!
Rāyu: All the rāyu’s of the rainbow work on this delicious number, we highly recommend truffle and black garlic for the original, and hot peanut and a good dose of kimchi for spicier versions but really this one is up to you and your beautifully creative pallets.
Seasoning: For a wonderful finishing touch a sprinkle of Original Get On Top Seasoning at the end locks in salty, crunchy and savoury… you can do this with your on little sprinkles, I just happen to also love this product and it’s yet another easy way to elevate simple everyday meals.
Hot tips:
- Don’t have the pan too hot your rice will burn!
- Don’t add too many eggs, the rice will burn before it cooks through.
- Check the bottom of your rice throughout the cook.
- Don’t cook it on too low the rice won’t crisp.
Simple? Of course it is! You’ll be fine…
